Clamping glued wood with proper pressure?

I asked a question on gluing 2 pieces of wood together by their faces and I was repeatedly told not to use too much pressure when I clamp them; in school we just screwed the clamps on tight.

I'm gluing a 1" x 6" x 8' and a 2" x 6" x 8' together to make a 3" x 6" x 8' plank.

If I'm using scrap wood along with c-clamps to clamp down wood, how do I know if I've applied too much pressure? just enough pressure?

Does it matter how big the scrap wood, area or thickness, is?

It should be enough pressure that the excess glue oozes out of the seam and there is no gap between the glued pieces. However much pressure that takes. Make sure to wipe all excess glue with a damp rag. The seam should then be just a pencil-thin line of glue between the pieces.
