If a teacher says type an essay 2 pages double-spaced does that mean one front and back or two front and back?

I think it means one front and back, but I don't want to do way less than I'm supposed to for the assignment. It's a take home essay exam.

"Type a two page essay" means two pages, front only.... therefore one page front and back should work unless your teacher doesn't like you printing double-sided.

Ask your teacher to be sure.
