what is the best knife sharpener for a butcher?

I am getting my boyfriend that is a butcher this but I am clueless about knifes, and sharpeners??

Get him a good quality sharpening stone, similar to the type a joiner uses to sharpen his chisels, and a good quality sharpening steel.

He will not thank you for one of those sharpening electric toys for the kitchen.
It he is a new butcher he will be taught how to do them properly with a stone, and a steel.

If you can visit the shop where he works and see them about what they use. Some shops may have some type of electric sharpener they all use if required.

I was recommended to try on of those home kitchen toys on one of my knives and it took weeks for me to get it back to the sharpness I had from using just a steel.

A really sharp knife will slice through a tomato finely without undue pressure.
