Like the recoil in a firearm, its caused by the force moving against the pellet. The second stage, which can be substantial, is caused by the spring-piston's sudden stop as it finishes its travel. This causes the gun to jerk forward a bit due to the large mass of the piston transferring its energy into the gun.
